
Potato is always a crowd-pleaser! From kids to adults, potato is always a favorite vegetable for sure. I have already posted spicy Aloo Methi recipe(link) and it is one of my favorites. If you want less spicy and less oily potato dish, then these potato wedges are for you. Kids love it as the name and the shape attracts them and the flavor of Oregano makes these wedges too addictive. - Potato - 2 big or 3 medium sized
- Ginger garlic paste - ½ tsp
- Chilli powder - 1 tsp or more
- Coriander powder - ½ tsp
- Salt - ½ tsp or as required
- Lemon juice - 1 tsp
- Oregano - ½ tsp
- Olive oil - 1 tbsp
- Preheat the grill oven to 370 degrees Farenheit.
- Wash potatoes and drain the water completely. Peel out the skin, if you don't like it. But we love to keep the skin. Baked skin tastes good.
- Cut into wedges. Neither too thick nor too thin.
- Pat dry excess water from the wedges using a tissue paper.
- Add ginger garlic paste, chilli powder, coriander powder, salt and lemon juice. Mix well.
- Then add Oregano and olive oil and give a quick mix. Do not keep this marinated for a long time as it will let out water. So, cut, marinate and bake immediately.
- Arrange the wedges in an oil-greased baking tray or baking tray lined with aluminium foil.
- Once the oven is preheated, put the tray in and bake for 20 to 25 mins, depending upon the size of the wedges.
- Take out the tray, flip each wedge to the other side and put back in the oven. Bake again for 15 to 20 mins, depending upon the size of the wedges.
- Once done, take out and transfer to serving bowl immediately. Do not keep covered as it might sweat. Enjoy hot !
These wedges taste best when hot. But my kids enjoy these wedges packed in lunchbox too.
